Banana Cinnamon Muffins
1 1/3 cups sugar
1 cup vegetable oil
4 eggs
4 mashed very ripe bananas
2 teaspoons vanilla
3 1/3 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon ground cinnamon

Directions
- Preheat oven to 375°F. Line a muffin tray with paper baking cups.
- In medium bowl, beat sugar, oil, and eggs with wire whisk. Stir in bananas and vanilla. Stir in remaining muffin ingredients just until moistened. Divide batter evenly among muffin cups (makes 24 muffins).
- Bake 20 minutes or until toothpick inserted in center comes out clean. Immediately remove from pan to cooling rack.
